It’s Friday and it is time for a little something sweet! Well I don’t know about your family but my gang loves crumb cake. I remember when I was little and my Mom use to get the Crumb Cake from the Bakery on Sundays and it was ALL about the crumbs. I was so bad, I use to steal some of the BIG crumbs and then get my Moms confectioners sugar shaker and fill in the holes so no one would know (yay…right!). Also the cake was always a little dry you know? So i would put a plate on top of it and push down hard to flatten it and it seemed to improve it! Well I don’t do that any more! This recipe for crumb cake is pretty fabulous. I have tried many basic coffee cake recipes and attempted to tweek them and this one by Martha Stewart is by far my favorite BEST. The only thing that I do different is I use plain Greek Yogurt instead of sour cream. It is the perfect base for any coffee cake you are going to create, you can not go wrong. Great in a rectangle baking pan, a tube pan or a bundt. This version is made in a large 13″X9″ rectangular baking pan.
Now if you are making Crumb Cake it truly is about the crumbs and these crumbs are truly special. I was watching The Cake Boss one night and they were making their famous crumb cake for a special order. When it came time to make the crumbs, Buddy went and got scraps of vanilla cake (by the way chocolate works FABULOUS!) and he crumbled the cake into small crumbs and proceeded to make them into a crumb mixture off camera. I thought to myself that this was genius! What a great taste and a great way to use cake scraps. Naturally I didn’t have any scraps so i whipped up one of our favorite buttermilk cakes to use for crumbs. Of course he didn’t give you the increments but I figured it out!
I have to tell you they are the most luscious crumbs I have ever had and mixed with Martha’s moist and delicious cake base this is a confection that has been added to my regulars and I hope to yours after you give it a try.
Classic Crumb Cake
Ingredients:
10 tablespoons of butter at room temperature
2 1/2 cups of all purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1 teaspoon of salt
1 cup of sugar
3 large eggs at room temperature
1 & 1/4 cups of sour cream (I used Greek Style Plain Yogurt)
1 teaspoon of good vanilla extract
Preheat oven to: 350 degrees
Butter you 13″X9″ baking pan and lightly flour
Mix together flour, baking powder, baking soda, and salt. Set aside. Beat butter and sugar on medium speed until light and fluffy. Add eggs, one at a time, mixing well after adding each one. Now add your vanilla. Add your flour and sour cream or yogurt until the batter is blended nicely.
Spread the batter into the pan evenly.
It is Crumb time now!
Ingredients:
3 cups of cake crumbs firmly packed
1 cup of all purpose flour
1 cup of light brown sugar
1 teaspoon of good cinnamon
1 teaspoon of salt (if you are using unsalted butter)
1 3/4 sticks of butter (use the other piece to butter the pan) (softened overnight)
In a large bowl mix together the cake crumbs, flour and sugar until completely mixed. Now cut your butter through the mixture with a fork or pastry cutter. You will see large crumb form and of course you can use your clean washed hands and form also. Now take these yummy crumbs and spread evenly ontop of the cake batter and pop in the oven for 30-40 minutes or until done. Of course the time depends on your oven. Just give it a check.
Now it is time for the cake to cool a bit. This gives you a little time to whip up a simple but delicious glaze.
Ingredients:
1 cup of confectioners sugar
heavy cream.
Put your confectioners sugar in a bowl and whisk in a little bit of cream at a time till you get the perfect consistency. Now drizzle over the cake and it is ready to serve on a pretty plate and a touch of garnish. The beauty of this crumb cake…It stays fresh for a good week…ENJOY. Next time give chocolate crumbs a try. I am going to try carrot cake crumbs next time…the possibilities are ENDLESS…hmmm red velvet crumbs…you see what I mean! YUM!!!

Hi there Arabesic, how are you : ) The cake crumbs are can be home made…you can follow my recipe or you can use pound cake crumbs…they are VERY GOOD to make the crumbs from. You can always use the old fashion way of a stick of butter…1/2 cup brown sugar…1/2 cup of white sugar…3/4 of a cup of white flour and mix till crumbly : ) Hope this helps…but any pound cake…vanilla cake is something that you can use : ) enjoy! bon appetit! hugs…

I do have an embarrassing question because I am sure I am missing something, but this looks too good to let a little pride stand in the way. 🙂 The recipe you’ve listed is for the base or is that for the cake crumbs and I need to go to MS website for cake base? You mention a buttermilk cake but I can’t find it or a link, or do you make two of the cake recipe listed and use one for the crumbs? I am sorry, I can’t quite figure it out. Thank you!

I am so sorry that it wasn’t clear : ) The cake recipe that is there is for the base of the cake and then you will need 3 cups of cake crumbs for the cake…you can make an extra cake to crumble and freeze the left over in a baggy pre-crumbed for the next one or you can snatch up a cake from the store…or like the pound cakes from costco or entemann’s …also let me tell you you can make chocolate crumbs too and they are awesome! You can make a box cake for the crumbs…anything you would like

I am making this wonderful looking crumb cake right now. Just wondered. The ingredients for the crumb part lists cinnamon; however, in the instructions for mixing them, the cinnamon isn’t mentioned. I’m guessing it just goes in with the flour, sugar & cake crumbs. Is that right? Thanks for the recipe! I’m making it again next weekend for a baby shower! Yum!

I am so happy that I found your recipe! My friend makes the BEST coffee cake in the world, but will absolutely not share her recipe. The best part of her cake is the huge crumbs on top. Yah, I know, the most important part. They are so big, my daughter has labelled it Boulder Cake. I could never understand how she got such big crumbs that hold together. I was so excited to see your recipe, as I think it may be cake that she uses in her crumbs as well! Thanks so much for sharing. That is a good question : ) I used the same recipe to make the cake crumbs…but after making this cake about 20 times (family favorite) you can use any nice vanilla cake you want…or a pound cake and YES…even the pound cakes that you buy in Costco…or the Sarah Lee and if you ever want to mix it up a bit more…you can use a chocolate cake for the crumbs…I made that last week and it was delish!!! Um, I’m revealing my ignorance here, I’ve never heard of crumb cake. But, I gotta say I would really love to try this recipe it looks and sounds so yummy! Now, my Mama would make a Dutch apple pie with sour cream in it, and a crumbly topping that was out of this world good. I need to see if I can locate her recipe~~

WOW Deise…your Mom’s Dutch Apple Cake sounds INCREDIBLE…you had me at sour cream : ) I bet you it is to die for! I was raised with crumb cake…my dad had one every Sunday after chruch…it was his “THING” Sometimes I would pick on the big crumbs before he cut it and I filled the holes up with powdered sugar…I thought I was fooling him …but he knew : ) good memories and crumb cake is DELISH! This is one that I put together with my favorite elements. Have you ever watched cake boss? Well he gave me an all new way to nake crumbs and that is to use actual cake crumbs with the butter…sugar and flor mixture and WOW are they fabulous! Hi there. This cake looks great i have it in the oven right now
I did have one question though. The recipe for the cake says to mix baking soda, powder and salt to the flour which I did. And when it’s time to add the flour to the cake it says to only put half of it along with the sour cream. Wat about the rest of the flour? The batter was already thick I didn’t put all the flour in it I put about 3/4s of it. Not sure if that’s right but we’ll see.

I made this cake yesteday for a bake sale and it turned out really well! But i am a little confused about how much butter goes into the crumbs. Is it a 1 stick + 3/4 stick or 3/4 of one stick? I did 3/4 of a stick and it turned out well but i am just curious?

YAY…because it is 1 stick and 3/4’s of a stick…but if the lesser amount worked well for you then go with it : ) When there is more butter…the crumbs are more dense and well formed…but it it was really good…we are all better off with less butter : ) I am so sorry that I confused me…hope you can forgive me! Oh…next time if your family loves chocolate…try a chocolate cake for the crumbs…or half and half…SOOOOOOO GOOD! hugs…
