Rise and Shine…wipe that sleep out from your eyes…it’s Monday! Yes…you guessed right…time for another It’s a Cinch recipe and a project will follow shortly after! Every Monday at The Cottage Market we share a meatless treat…every day in my household is meatless so I have a lot of them : ) Today’s recipe is a CINCH…quick…easy and healthy. I sure hope you enjoy! Tropical Salsa and Fresh Chips!
Ingredients:
Fresh Mango
(I will also add that the frozen mango at Trader Joe’s is fabulous for this recipe…that way you can have it all year round)
you need the fruit from one whole mango which is approximately 1 cup chopped into 1/4 inch cubes or the equivalent in frozen.
Pineapple
Fresh or Frozen 1 cup chopped
Fresh Tomato
I used grape tomatoes at this time of the year…they are perfect…they don’t yield a lot of liquid and that is great for this recipe…use 1 cup chopped
FreshBellPeppers
I used the small ones
2 each of Yellow…Orange and Red
finely chopped
Fresh Scallions
slice thinly approximately a half of a bunch…use white straight through to the green…no waste!
Fresh Parsley or Cilantro
1/2 of a cup
it is your choice or use both…unfortunately we are not cilantro fans in this house so that is why I use parley which works fabulously but for all of you cilantro lovers…have fun!
Fresh Jalapeno Peppers
I used 3 full peppers…finely minced…seed and all… we like it on the hotter side…so adjust to your families likes!
Lemon and Lime
Use the juice of one full lemon and one full lime…if they are not juicy you might need 2!
Sea Salt and Freshly ground pepper to taste!
The Directions are easy peasy~add all the ingredients together in a mixing bowl…pour the juice over it…salt and pepper…toss completely and serve!
As always there is a little note to you…this recipe can be altered in all kinds of ways…you can use more or less of everything…adapt it to your families likes and dislikes…you can take out something you don’t like and add something else…I love to use fresh peaches and kiwi sometimes…the list is endless but the taste is wonderful…We like this with chips and it is fabulous on grilled tofu and I love it on seasoned rice…endless uses! We all enjoyed it with fresh chips yesterday…
Talk about easy peasy…all you do is take some soft shell tortilla’s …cut into triangles (8 per round is a perfect size) then fry in a skillet with some preheated vegetable oil until lightly golden (about a minute and a half…flipping at least once)…it happens FAST so don’t leave that pan for a second! Scoop them out with a slotted spoon and place on a plate with paper towels to absorb the extra oil…sprinkle with fresh sea salt or a mixture of spices and viola!!! SOOOOOOOOOOOOOOOOOOOO easy and so worth the few extra minutes!!!
