Salted Caramel Apple Pie Sundae…sound good? It is yummy and very easy to create! The best thing is you can make all of the elements ahead of time and just make sure there is some creamy vanilla or maybe rum raisin ice cream in the freezer waiting to be scooped up. It’s great for a holiday dessert and it is perfect for those unexpected guests during the Season of Cheer…you will always have an amazing treat ready for whatever loved one comes through your door!
How easy is it? Really easy! Let’ start with the salted caramel sauce…You can do 1 of 3 things…you can make a yummy sauce…I used a fabulous caramel sauce recipe over at thekitchn …it is so incredible and easy to make…or you can melt caramels and add a touch of cream or you can purchase your favorite caramel sauce.
Now for the Apple Pie Topping…once again you have three choices! You can use a prepared filling or you can make your own or try my version.
Ingredients
4 apples of your choice (I used Granny Smith)
2 tablespoons of Brown Sugar
1 tablespoon of lemon juice
2 tablespoons of Sugar
1 teaspoon of Cinnamon
2 tablespoons of butter (for apple saute)
1 tablespoon of raisins
1 tablespoon dried cranberries
1 tablespoon of chopped walnuts
1/8 tsp of salt
2 tablespoons of good maple syrup
Instructions
1. Peel your apples…slice them nice and thin and then chop the slices in half…place them in a bowl and add your lemon juice and toss so they are all covered and safe from going brown.
2. Melt your butter and place the apples in the skillet and saute for about 2 minutes…then add your sugars…cinnamon…salt and the other dried fruit and nuts if you would like. Saute for another 4-5 minutes until everything is nice and soft and blended.
Now it is ready to put in a nice Mason Jar and tucked away in the fridge for dessert time. You know what I always say…there are no absolutes with most recipes except baked goods…so if you don’t want nuts…leave them out…if you like chopped dates…add them…you get the picture…you are the leader of your culinary symphony!
Now for the super quick and easy pound cake croutons that are made in a flash! Once again you have choices…you can use your own yummy pound cake recipe or you can purchase a pre=made version. I have to admit…I always love homemade first…but if you get a good pound cake…it works like a charm…so if you don’t want to turn that oven on…no problem! Now I will share my mistake with you. I make homemade croutons all the time and thought that the method would work perfectly for these. So I cut my pound cake up into little cubes…tossed them with melted butter…sprinkled them with cinnamon and sugar and placed them in a pan and placed them in the over for 6 minutes…um…about 3 minutes too much and well let’s say…the birdies had a mid-day treat and the batteries in the fire alarm work just fine!!!!
As they say…we learn from our mistakes so I came up with a SUPER EASY way that I can share with you…so all is good! Just slice thick pieces of your pound cake and place them in the toaster on medium. When they pop up all toasty and golden…just spread a bit of butter on both sides…then sprinkle with some sugar and cinnamon. When the pieces have cooled off…cut into small croutons and voila…you have tasty dessert croutons that you can use not only on this recipe but on ANY dessert that wants a little extra touch! They are yummy and add a little crunch…a little easier than pie crust : ) Put these in a zip lock bag and place them in your freezer to stay fresh…the defrost in minutes! If you are going to use them in a few days…just put them in a sealed container.
Time to scoop that ice cream. French Vanilla is scrumptious…Rum Raisin…extra special…Butter Pecan…mmmmmmm good…alas…my chocolate loving heart can not recommend that glorious flavor for this…but there are so many options that work perfectly! I place a little bit of the apple mixture at the bottom or the bowl…dish…glass or yes…even mason jar (and then the scooping begins.
Spoon out a healthy helping of your apple pie mixture (if you are serving right away…warming that apple pie blend is really a yummy idea : )
Now it is time to add those tasty croutons…
now drizzle your delicious caramel sauce all over…
Sprinkle with Fleu de sel or your favorite sea salt and if you like…a touch of chopped nuts! Now it is time to serve it up and enjoy!
